Fig and walnut bread

Ingredients 

3 eggs

1 1/2 cups of sugar (I used coconut sugar you can use maple syrup)

2 cups fresh ripe figs, mashed or cut into small pieces

3/4 cup olive oil

3 cups flour (I used two cups of rye flour and one cup of white spelt flour)

2 tsp bicarbonate of soda

 1/2 tsp of baking powder

Pinch of salt

1 tsp of vanilla extract

1/2 tsp cinnamon

1/2 cup buttermilk/sour cream (I used sour cream I’m sure yoghurt would work well too) 

1 cup of chopped walnuts (pecans work well too) 

Method

Preheat your oven to 180 C/Gas 4). Grease a standard loaf tin. In a mixing bowl beat the eggs with an electric mixer, then add the sugar and beat well. With the mixer on low speed, add mashed figs and the olive oil then add the vanilla extract. 

Sift together flour, baking powder, bicarb, salt, and cinnamon and add the flour mixture to the egg mixture alternating with the buttermilk. Beat until well blended. Finally fold in the chopped walnuts

Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean.
